BBQ Cola Pork Ribs

Ingredients
10 × 8 pork rib racks (425g per 8 ribs)
625ml ZoOSh BBQ Marinade and Basting Sauce
625ml cola
2 vanilla pods, split
1 pineapple, cut into thin wedges
1 continental cucumber, cut in half lengthways, seeded then thinly sliced diagonally
1 red onion, thinly sliced
2 pomegranates, seeds removed
ZoOSh French Dressing
ZoOSh BBQ Marinade and Basting Sauce, extra, for basting
Method
- MARINATE the pork in the combined BBQ marinade, cola and vanilla, covered and chilled for up to 24 hours.
- PREPARE a salad by combining the pineapple, cucumber, onion, pomegranate and dressing.
- LIFT the pork from the marinade and place on an oiled rack over a foil lined baking tray. Bake in a hot oven 200oC oven for 20 minutes. Baste with extra BBQ marinade. Reduce the oven to 160oC and bake for a further 30 minutes. Serve immediately with salad.
