Asian Style Chicken Salad

Ingredients

⅓ cup BBQ sauce

2 tablespoons soy sauce

2 tablespoons golden syrup

3 cloves garlic, crushed

18 chicken tenderloins

½ wombok, finely shredded

1 cup bean shoots

4 spring onions, diagonally sliced into 2cm pieces

1 red capsicum, sliced

½ cup ZoOSh Coleslaw Dressing

2 green chillies, finely sliced

100g packet crunchy fried noodles

Method

  1. COMBINE BBQ sauce, soy sauce, golden syrup, and garlic in a large bowl and add chicken. Toss together to combine and refrigerate for 1 hour to marinate.
  2. THREAD chicken onto skewers and place on a paper lined baking tray. Bake in a hot oven 200°C for 20-25 minutes until cooked, brushing halfway through cooking with reserved marinade.
  3. COMBINE wombok, bean shoots, spring onions, capsicum and dressing and spoon onto a large platter or individual serving plates. Sprinkle with combined chillies and noodles and serve with chicken skewers. Serve immediately.
