Baked Mediterranean Chicken

Ingredients

1.5kg small to medium (approx 20) chicken thigh fillets

50g crushed garlic

375ml ZoOSh Tangy Tomato

25g rosemary leaves, roughly chopped

Rice, for serving

Greek Salad, for serving

Method

  1. COMBINE the chicken with the garlic and Tangy Tomato Dressing. Marinate for 3 hours or overnight in the refrigerator.
  2. PLACE the chicken pieces onto greased oven trays, discard any remaining marinade. Sprinkle over the rosemary and bake in a hot oven 200°C for 30-40 minutes or until cooked. (depending on size of the fillets)
  3. SPOON the rice onto a serving plate, top with the chicken and serve with a little Greek Salad.
