BBQ Cola Pork Ribs

Ingredients

10 × 8 pork rib racks (425g per 8 ribs)

625ml ZoOSh BBQ Marinade and Basting Sauce

625ml cola

2 vanilla pods, split

1 pineapple, cut into thin wedges

1 continental cucumber, cut in half lengthways, seeded then thinly sliced diagonally

1 red onion, thinly sliced

2 pomegranates, seeds removed

ZoOSh French Dressing

ZoOSh BBQ Marinade and Basting Sauce, extra, for basting

Method

  1. MARINATE the pork in the combined BBQ marinade, cola and vanilla, covered and chilled for up to 24 hours.
  2. PREPARE a salad by combining the pineapple, cucumber, onion, pomegranate and dressing.
  3. LIFT the pork from the marinade and place on an oiled rack over a foil lined baking tray. Bake in a hot oven 200oC oven for 20 minutes. Baste with extra BBQ marinade. Reduce the oven to 160oC and bake for a further 30 minutes. Serve immediately with salad.
