Light Mustard Chicken and Walnut Salad

Ingredients
10 × 180g skinless chicken breast fillets
300g ZoOSh Free Mayonnaise
200ml milk
40g French mustard
250g walnuts
150g baby rocket
5 spring onions, finely sliced diagonally
4 lebanese cucumbers, cut in half lengthways, seeded and sliced
1 cup mint leaves, finely chopped
Method
- COOK chicken fillets on preheated grill plate for 4-5 minutes each side, until cooked through. Rest, covered, for 10 minutes.
- WHISK together the ZoOSh Free mayonnaise, milk and French mustard until smooth.
- ARRANGE a chicken fillet on each serving plate. Top with walnuts, rocket, spring onion, cucumber and mint. Drizzle with dressing and serve.
