Mediterranean Chorizo and Risoni Salad with Roasted Tomatoes

Ingredients
250g punnet cherry tomatoes, halved
Olive oil spray
1 chorizo sausage, sliced and cooked till crisp
1 ½ cups frozen peas, thawed and blanched
1 cup risoni pasta, cooked, drained and cooled
½ cup pitted Kalamata olives
¼ cup baby basil leaves
⅓ cup ZoOSh Italian Dressing
Method
- ⅓ cup ZoOSh Italian Dressing
- COMBINE the remaining ingredients in a large bowl then toss through the tomatoes. Serve immediately.
