Potato and Orange Poppy Seed Salad


Ingredients

1 kg chat potatoes, cooked until just tender, halved and cooled

2 bunches asparagus, cut into 5cm lengths, blanched

2-3 large oranges, segmented

¾ cup ZoOsh Premium Mayonnaise

¼ cup milk

20g poppy seeds

10g grated orange rind

½ cup shredded mint

3 spring onions, cut into fine shreds

Method

  1. COMBINE the potatoes with the asparagus and orange. Whisk together the mayo, milk, seeds and rind to make a pourable dressing, then drizzle over the salad. Top with the mint and spring onions. Serve immediately.
