Rare Roast Beef and Lemon Salad

Ingredients
1.8-2kg piece beef girello, well seasoned
200ml ZoOSH French or FREE French Dressing
5 lemons, rind and pips removed, flesh cut into 0.5cm slices
⅓ cup continental parsley leaves
3 fresh red chillies, seeded and finely chopped
100g baby capers
1 teaspoon sea salt
4 baby cos lettuce
200g olives
shaved parmesan for serving
grissini sticks for serving
Method
- COOK beef at 220°C for 15 minutes. Reduce heat to 180°C and cook for a further 45-60 minutes, or until springy to touch (medium rare). Set aside to rest. Beef may be served, sliced warm or cold.
- COMBINE ZoOSh FREE French Dressing, sliced lemon,parsley, chillies, capers and salt.
- PLACE the salad leaves into serving bowls. Top with the sliced beef and olives. Drizzle over the dressing. Serve with grissini and shaved parmesan.
