Rare Roast Beef and Lemon Salad

Ingredients

1.8-2kg piece beef girello, well seasoned

200ml ZoOSH French or FREE French Dressing

5 lemons, rind and pips removed, flesh cut into 0.5cm slices

⅓ cup continental parsley leaves

3 fresh red chillies, seeded and finely chopped

100g baby capers

1 teaspoon sea salt

4 baby cos lettuce

200g olives

shaved parmesan for serving

grissini sticks for serving

Method

  1. COOK beef at 220°C for 15 minutes. Reduce heat to 180°C and cook for a further 45-60 minutes, or until springy to touch (medium rare). Set aside to rest. Beef may be served, sliced warm or cold.
  2. COMBINE ZoOSh FREE French Dressing, sliced lemon,parsley, chillies, capers and salt.
  3. PLACE the salad leaves into serving bowls. Top with the sliced beef and olives. Drizzle over the dressing. Serve with grissini and shaved parmesan.
