Ingredients
1.2kg peeled potatoes
250ml ZoOSh Tartare Sauce
640g drained canned salmon
100g finely chopped onion
Finely grated rind 1 lemon
60g flour
2 eggs, beaten
100g dried breadcrumbs
Oil, for shallow frying
Chips, for serving
Salad, for serving
ZoOSh Tartare Sauce, extra, for serving
Method
- COOK the potatoes in boiling salted water until tender. Drain and mash with Tartare Sauce.
- COMBINE potatoes, salmon, onion and lemon rind. Divide into 20 x 100g portions. Shape and coat in flour, egg and breadcrumbs. Chill until required.
- SHALLOW fry for 3-4 minutes a side then serve with chips, salad and extra Tartare Sauce.
