Satay Pulled Pork Sliders

Ingredients

1.5kg pork shoulder

250ml ZoOSh Satay sauce

200g chopped red onion

1 large red chilli, chopped

600g thickly sliced red capsicum

375ml coconut milk

30 brioche slider buns, split

Coleslaw, for serving

Coriander, for serving

Method

  1. MARINATE the pork in the Satay sauce with the onion and chilli, covered and chilled for up to 24 hours.
  2. TRANSFER the pork and marinade to a large saucepan; add the capsicum and coconut milk to cover. Cover and cook over a gentle heat for 3 hours.
  3. LIFT the pork and capsicums from the pan and pull the pork apart using 2 forks. Assemble the sliders with some pork, capsicum, slaw, coriander and a drizzle of cooking juices. Serve immediately.
