Satay San Choy Bow

Ingredients
1 tablespoon peanut oil
1.25kg chicken mince
8 spring onions, sliced
2 red capsicum, thinly sliced
300ml ZoOSh Satay Sauce
60ml sweet chilli sauce
2 × 230g cans sliced water chestnuts, drained
400g bean shoots
1 cup coriander leaves
20 lettuce cups
Peanuts, toasted and roughly chopped
Method
- HEAT the oil in a large frying pan over high heat. Cook chicken 6-8 minutes until golden. Add spring onion and capsicum and cook a further minute. Reduce heat to medium.
- STIR in ZoOSh Satay Sauce, chilli sauce and chestnuts. Cook for a further 2-3 minutes until heated through. Remove from heat and stir in bean shoots and coriander.
- SPOON chicken mixture into lettuce cups, top with peanuts and serve.
