Smashed Caesar Potatoes

Ingredients

30 potatoes

60ml olive oil

Salt and pepper to taste

250g prosciutto, sliced and pan fried.

250ml ZoOSh Caesar Dressing

200g Dairymont parmesan, shaved

½ cup chives, chopped

Method

  1. PLACE potatoes on a baking tray, spray with oil and season. Bake at 200°C for 20 minutes.
  2. SQUASH potatoes slightly, place back in the oven for a further 20-30 minutes until tender.
  3. PLACE potatoes on service plates, top with prosciutto. Drizzle with ZoOSh Caesar Dressing, garnish with parmesan and chives to serve.
