Smokey BBQ Brisket

Ingredients

1 cup ZoOSh BBQ Marinade and Basting Sauce

750ml beer

10 cloves garlic, roughly chopped

2 long red chillies, chopped

2kg beef brisket

40-60ml oil

Mashed potato, for serving

Asparagus and peas, for serving

Method

  1. COMBINE the BBQ marinade, 125ml beer, garlic and chilli and pour over brisket. Marinate, covered and chilled for up to 24 hours.
  2. LIFT the meat and reserve the marinade. Heat oil in a large saucepan and brown the meat on all sides. Pour over reserved marinade, adding extra beer if required to cover meat. Cover and cook over a very low heat for 4 hours.
  3. REST meat for 15-20 minutes before carving and serving with a drizzle of cooking juices and prepared vegetables.
