Smokey Tomato Meatballs

Ingredients
1.25 kg pork and veal mince
400g finely chopped onion
20g crushed garlic
2 eggs
300g fresh breadcrumbs
Salt and pepper, to taste
400mls ZoOSh BBQ Basting Sauce
2 × 800g cans chopped tomatoes
500mls chicken stock
10g brown sugar
Couscous, to serve
Method
- COMBINEthe mince, onion, garlic, egg, breadcrumbs, and seasonings in a large bowl. Shape mixture into 50 meatballs.
- PLACE the meatballs into a large greased shallow baking tray. Whisk together the BBQ Basting Sauce, tomatoes, stock and brown sugar then pour over the meatballs.
- BAKE in a moderately hot oven 190°C for 35-40 minutes or until the meatballs are cooked through and sauce has thickened slightly. Turn the meatballs half way through the cooking time.
- SPOON the meatballs and sauce over couscous. Serve immediately.
