Chargrilled Prawn Cocktail

Ingredients
30 green prawn cutlets
Olive oil spray
1 large iceberg lettuce, cored, rinsed, drained and cut into 6 wedges
2 avocadoes cut into thick wedges
½ cup ZoOSh Thousand Island Dressing
Chives, for serving
Lime cheeks, for serving
Method
- INDIVIDUALLY skewer each prawn cutlet along the length of a skewer. Spray with oil. Char grill prawn skewers until cooked as desired.
- ARRANGE the lettuce and avocado on serving plates and top each plate with 5 prawn skewers.
- DRIZZLE with dressing and serve with chives and limes. Serve immediately.
- TIPS: Soak bamboo skewers for at least 30 minutes in water before threading with prawns. This will prevent them from burning during cooking.
