Chicken Tikka Salad with Coriander Dressing

Ingredients
1.5kg chicken tenderloins
180g tikka curry paste
20ml lemon juice
300g ZoOSh Premium Mayonnaise
200ml milk
2 tablespoons finely chopped fresh coriander
300g mixed lettuce
5 ripe tomatoes, cut into thin wedges
4 lebanese cucumbers, cut into ribbons with a vegetable peeler
1 red onion, thinly sliced
Naan bread, to serve
Method
- TOSS together the chicken, curry paste and lemon juice until well coated. Cover and marinate 20 minutes.
- COMBINE ZoOSh Premium Mayonnaise, milk and coriander in a bowl, set aside.
- HEAT a grill plate or pan over medium heat and cook the chicken 3-4 minutes each side until cooked through. Allow to rest, covered, for 5 minutes, then cut into thick slices.
- ARRANGE lettuce, tomato, cucumber, onion and chicken onto serving plates. Drizzle with coriander dressing and serve with naan bread.
