Salmon Patties

Ingredients

1.2kg peeled potatoes

250ml ZoOSh Tartare Sauce

640g drained canned salmon

100g finely chopped onion

Finely grated rind 1 lemon

60g flour

2 eggs, beaten

100g dried breadcrumbs

Oil, for shallow frying

Chips, for serving

Salad, for serving

ZoOSh Tartare Sauce, extra, for serving

Method

  1. COOK the potatoes in boiling salted water until tender. Drain and mash with Tartare Sauce.
  2. COMBINE potatoes, salmon, onion and lemon rind. Divide into 20 x 100g portions. Shape and coat in flour, egg and breadcrumbs. Chill until required.
  3. SHALLOW fry for 3-4 minutes a side then serve with chips, salad and extra Tartare Sauce.
