Smokey BBQ Brisket

Ingredients
1 cup ZoOSh BBQ Marinade and Basting Sauce
750ml beer
10 cloves garlic, roughly chopped
2 long red chillies, chopped
2kg beef brisket
40-60ml oil
Mashed potato, for serving
Asparagus and peas, for serving
Method
- COMBINE the BBQ marinade, 125ml beer, garlic and chilli and pour over brisket. Marinate, covered and chilled for up to 24 hours.
- LIFT the meat and reserve the marinade. Heat oil in a large saucepan and brown the meat on all sides. Pour over reserved marinade, adding extra beer if required to cover meat. Cover and cook over a very low heat for 4 hours.
- REST meat for 15-20 minutes before carving and serving with a drizzle of cooking juices and prepared vegetables.
