Smokey Tomato Meatballs

Ingredients

1.25 kg pork and veal mince

400g finely chopped onion

20g crushed garlic

2 eggs

300g fresh breadcrumbs

Salt and pepper, to taste

400mls ZoOSh BBQ Basting Sauce

2 × 800g cans chopped tomatoes

500mls chicken stock

10g brown sugar

Couscous, to serve

Method

  1. COMBINEthe mince, onion, garlic, egg, breadcrumbs, and seasonings in a large bowl. Shape mixture into 50 meatballs.
  2. PLACE the meatballs into a large greased shallow baking tray. Whisk together the BBQ Basting Sauce, tomatoes, stock and brown sugar then pour over the meatballs.
  3. BAKE in a moderately hot oven 190°C for 35-40 minutes or until the meatballs are cooked through and sauce has thickened slightly. Turn the meatballs half way through the cooking time.
  4. SPOON the meatballs and sauce over couscous. Serve immediately.
